Gluten Free Carrot Cake

Now, day many people cant eat gluten. So when I decided to open my company I wanted to offer gluten free desserts for all those who love desserts but cant have any gluten.

Here is a recipe for Gluten Free Carrot Cake.

Cake Ingredients:
  • 3 cups blanched almond flour
  • 1¾ teaspoons salt
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 5 eggs
  • ½ cup agave nectar
  • ¼ cup grapeseed oil
  • 3 cups carrots, grated
  • 1 cup raisins
  • 1 cup walnuts
To make cake:
  1. In a large bowl, combine almond flour, salt, baking soda, cinnamon and nutmeg.
  2. In a separate bowl, mix together eggs, agave and oil.
  3. Stir carrots, raisins and walnuts into wet ingredients.
  4. Stir wet ingredients into dry.
  5. Place batter into 2 well greased, 9 inch round cake pans.
  6. Bake at 325° F for 35 minutes
Dairy-Free Cream Frosting:
  • 1 cup coconut milk
  • 1 cup agave nectar
  • ⅛ teaspoon salt
  • 5 teaspoons arrowroot powder
  • 1 tablespoon water
  • 1¼ cup coconut oil
To make frosting:
  1. In a medium saucepan, heat coconut milk, agave and salt, simmer for 10 minute.
  2. In a small bowl, combine arrowroot and water to form a smooth paste.
  3. Pour arrowroot mixture into saucepan.
  4. Mix contents of saucepan with a hand blender and bring to a boil, briefly.
  5. Remove pot from heat and very gradually blend in coconut oil.
  6. Place pot in freezer for approximately 30 minutes, until frosting solidifies and turns white.
  7. Remove from freezer and blend again, until fluffy.
  8. Spread over cooled cake and enjoy!

Guayava Cuban Pastery (Pastel de Guayava)

We are located in Miami, which has the biggest Cuban community in all of the US. One of the best pastery that Cubans eat for breakfast, snack, lunch or desserts is the Guayava Pastery. they are sweet, buttery and crispy & thewy all in one. I love to get up every Saturday morning and go to the bakery to buy some.
One Morning I woke up and said to myself, you love to bake and make all the things you love to eat why not try to make the Pastellitos de Guayava. So, I got up and instead of running to the bakery, like always I ran to the supermarket. I bought all the ingredients to create this amazing pastery.
